Vegetable Lasagna Roll-ups

So, I made these today and they were great.  It's sort of a recipe I pieced together from an idea I saw on Pinterest.  Enjoy!



Ingredients:

Lasagna Noodles
1 egg
1/2-3/4 Ricotta Cheese container
Italian herbs & spices
Black Pepper
Mushrooms
Onion
Garlic
Broccoli
Carrots
Parmesan Cheese
Mozzarella Cheese
Spaghetti Sauce

Directions:

Cook lasagna noodles, drain and set aside.  Preheat oven to 350F.
Combine egg, ricotta cheese, 1/2 cup Parmesan cheese, pepper and Italian herbs and set aside.
Chop mushrooms, onion and broccoli. Shred carrot.  In skillet, heat olive oil and garlic.  Add veggies and cook until tender. Set aside.
Lightly cover bottom of a glass dish with spaghetti sauce.
Assemble!
Lay out noodle.  Add spoonful of ricotta mixture, then veggie mixture, then top with spaghetti sauce and sprinkle with mozzarella.  Roll up and place seam side down in dish. Repeat.
Top with additional spaghetti sauce and cheeses.
Bake 20 minutes.
Eat.
